The set a model falls back to when its template names none — openmixer's own.
A default is not a constant in disguise: every template still declares its set, and this
one is the declaration of the openmixer template. What it buys is that a call site with no
template in hand (a pure normaliser, a unit test) is reading the SHIPPED set rather than a
private copy of the six.
