Resolve the demo rig's build decisions from a ServerConfig — pure (no PipeWire, no fs), so tests can prove the bundled default install config plans the exact console the bespoke demo bin used to build. The catalog default is the @freemixer/catalog package's own data/catalog.json (package-relative; a host that was never scanned loads an empty catalog) — never a hard-coded checkout path.
